Meal ideas can go out the window when you have so much to do. Nono Mtshali has great meal ideas and recipes that will make your family happy.
Like everyone, I love a good bite, especially one that is prepared and cooked to perfection. We are fortunate, as South Africans, to have great chefs who help us make the perfect food for our family and friends. My personal favourite chef, Nono Mtshali is killing it, not only in the gram, but she has recently launched a cookbook you need to add to your collection. It will sure help make mouth-watering meals. Here are two recipes you can try out this week:
Fish with creamy sauce
Fish ingredients:
•1/4 cup all-purpose flour
•1 tsp salt
•2 eggs
•2 cups bread crumbs
•500 ml cooking oil, for frying
•4 medium fish fillets
Method:
•In shallow dish, mix flour and salt. In a bowl, beat eggs with whisk. In another bowl, place bread crumbs
•In a pot, heat oil. Coat both sides of fish fillets with flour mixture, then dip in the egg. Place 1 or 2 pieces of fish on bread crumbs and coat completely.
•Fry fish in batches in hot oil about 4 minutes, turning once, until golden brown. Drain on paper towels.
Creamy sauce ingredients:
•380 g Nestle evaporated milk
•1 tsp butter
•1 tsp all-purpose flour
•Pinch salt
•1/2 tsp black pepper
Method:
•Melt butter in a pan and add flour. Cook for a minute and add Nestle evaporated milk. Whisk for a minute or until smooth and season with salt & pepper.
Easy oxtail stew
Ingredients:
● 2 tbsp cooking oil
● 1 kg oxtail
● 3 cloves garlic, crushed
● 1 onion, finely chopped
● 1 tbsp paprika
● 3 cups boiling water
● 2 tbsp tomato paste
● 1 tin chopped tomatoes
● 250 ml red wine (optional)
● 3 beef stock cubes (or salt & pepper) to taste
Method:
Heat the cooking oil in a large pot. Brown the pieces of meat, and set aside.
Add the garlic, onion and fry for a few minutes until the onion is translucent and add paprika.
Add a tin of tomatoes, and wine. Put the meat back and add stock cubes in boiling water. Add the stock mixture into the pot.
Leave to slow cook on low heat for 2 hours, covered, stirring every now and then. Add tomato paste and season, to taste . Cook for a minute. Serve.
(You can add veggies if you like.)
