Heritage Day Recipe Idea To Enjoy With Your Family

Heritage day is around the corner, and for some, it means a long weekend awaits. The Lazy Makoti shares her fondest recipe idea for you to try this weekend

24 September marks Heritage day in South Africa, a day we celebrate the different cultures that make us a rainbow nation. That day the pride in our roots will be showcased through the myriad traditional attires and food. Speaking of which, what better way to celebrate heritage day than with the warmer days of the long weekend and this proudly South African braai-ed snoek, prepared by you and the Lazy Makoti?

Rice and veg stuffed Braai’d Snoek

Ingredients: 

1,5 kg Snoek
1 cup cooked rice
2 teaspoons lemon and herb spice
1 teaspoon Garlic, minced
1/2 red and yellow pepper
1 cup spinach
1/2 cherry tomatoes , halved
1 cup snap peas, carrots and corn, steamed
Oil for frying

Method: 

Heat oil in a pan over medium heat and fry the onion, peppers and garlic. Cook for 5mins till soft.

Add and spinach and saute till wilted and cooked.

Season with the lemon and herb spice.

Add the cooked rice and the rest of the vegetables and combine well.

Use the rice mixture to generously stuff the fish by opening it up and fill with rice mixture and wrapping in foil

Cook on hot coals for 15 min on each side. (You can also bake in 180 oven for 20-25min)

Serve with salad.
