Add some African flavour to your dish this evening with this delicious peri peri seafood Jollof rice prepared by you and the lazy Makoti
Fresh from publishing a best selling cookbook, called The Lazy Makoti’s Guide To The Kitchen, Mogau Seshoene has another seafood recipe idea that you can impress your family with this evening. Get your apron ready and let’s get cooking:
Ingredients:
4-6 tiger prawns
100g calamari
1 tablespoon butter
2 tablespoon Oil
2 Teaspoon of Thyme
2 cloves of Garlic
1 Medium size Onion, chopped
¼ cup @knorrflavour peri peri sauce
1 cup boiling water
¼ cup Tomato paste
2 Cups of Chicken stock
2 Cups of long grain Rice
Salt to taste
Method:
Melt the butter, add the oil and the garlic. Add the calamari and prawns, and fry over a high heat, stirring, for 3 – 4 minutes until the prawns are pink. – Prepare the peri peri sauce by adding the contents of the sachet to 1 cup boiling water – In the same pan, saute the Onions for about 1 minute then add the Tomato Paste. Fry for few seconds then stir in the rice until it is well coated with the sauce then add the Chicken stock and water. Cover with a tight-fitting lid and allow it to come to a boil. Once it starts to boil, reduce the heat to medium-low cook until the rice is done. – Add the Knorr peri peri sauce and season with salt to taste
Serve with the seafood and enjoy.
