Winter calls for a warm and hearty. What better way to warm your loved ones’ hearts than through their stomachs? Here are trusted recipes from our favourite chef, Nono, that you can try:
Classic beef stroganoff
Ingredients:
beef strips
4 tbsp cooking oil
1 large onion, sliced
300 g mushrooms , sliced
3 tbsp butter
2 tbsp flour
2 beef stock cubes
1 tbsp Dijon mustard
2 cups fresh cream
1 cup milk
salt and pepper, to taste
Method:
Heat oil. Add beef, cook until browned. Immediately remove onto a plate. Add butter, melt. Then add onions and cook for one minute, then add mushrooms.
Cook mushrooms until golden. Add flour, cook, stirring, for a minute. Add stock cubes while stirring, then add fresh cream, milk and mustard. Stir until incorporated.
Bring to simmer, then reduce heat to medium low.
Once it thickens, adjust salt and pepper to taste. Add beef back in, simmer for one minute, then remove from stove and enjoy!
Hearty beef stew
Ingredients:
1 kg stewing beef meat
1 large onion diced
5 cloves garlic minced
2 tbsp tomato paste
2 tbsp paprika
4 tbsp cooking oil
1 tbsp dried oregano
Salt and pepper to taste
4 potatoes, quartered
4 cups beef stock
Method:
Cut meat into cubes and season with salt and pepper to taste. Set aside. Heat oil and add beef and sauté for about 10 minutes, stirring occasionally. Add the onions, garlic, tomato paste and season with paprika and oregano. Stir and continue to sauté…Add the stock and stir well. Cover the pot and cook until halfway…add the potatoes. Cook until meat is cooked through and potatoes soft. Enjoy!
Bean soup
Ingredients:
2 cups of @imbo_beans red speckled beans
1 medium-sized onion, chopped
1 green pepper chopped
2 cloves garlic, minced
2-3 bay leaves
1 tsp ground cumin
1 tablespoon curry powder
2 tomatoes, chopped
2 stock cubes
Method:
Sort and clean the beans and soak in water overnight.
Boil in clean water until soft and then drain.
Heat the oil in a pot and fry the onion and green pepper until soft.
Add the curry powder, cumin and bay leaves fry for 2 minutes, stirring continuously to release the flavour and aroma.
Add the water, stock cubes and beans and simmer for 30 minutes, stirring occasionally. Dish up and enjoy warm.
