From home-made pizza to sweet and sour lamb chops, Chef Nono will help you turn your kitchen into a food haven this week. Why not try our two favourite recipes below?
Tortilla base lamb pizza
INGREDIENTS:
* 1 rolled boned leg of lamb, trimmed
* 1 tbsp chopped fresh rosemary
* 3 garlic cloves, minced
* 1 tsp salt
* 1/2 cup spare rib sauce
METHOD
• Preheat oven to 250°C
• Secure roast with twine/string.
• Combine rosemary, garlic, spare rib sauce and salt.
• Rub surface of roast with mixture. Place roast on the rack roasting pan. Bake at 140° for 1 hour and 15 minutes.
Now cut meat into strips.
OTHER FILLINGS
* 1/2 cup spare rib sauce
* 1/4 cup mayo
* 1/2 cup mozzarella cheese, grated
* 1/4 cup parmesan cheese, grated
* 1 cup chorizo, sliced
ASSEMBLING PIZZA
1. Baste spare rib sauce & mayo on tortilla base.
2. Add the lamb and all your other toppings. The rocket leaves are best if added baking.
3. Sprinkle a layer of the grated parmesan and mozzarella cheese.
4. Place the pizza on a baking sheet and bake for about 6-8 minutes or until the cheese is melted and the tortilla edges start to get golden and crispy. Enjoy!
Sweet and sour lamb chops
INGREDIENTS
1 kg lamb chops
1 tbsp pepper steak spice
1 tbsp fresh thyme, chopped
1/4 tsp rosemary, finely chopped
1 cup sweet & sour sauce (or sweet chilli)
2 tbsp lemon juice
1 tbsp olive oil
METHOD
Combine thyme, rosemary and seasoning
and rub on lamb chops.
Pan fry on low-medium heat until lamb has cooked.
Add the lemon juice and sauce, baste chops
and cook for a further minute.
